This coffee is called Honey Process or “Miel” in Spanish, because after the skin of the coffee cherry is removed, the fruity pulp is allowed to ferment and dry directly on the bean. Most Central American coffees are fermented in water to remove this fruity pulp. The honey process allows some of the juices of the coffee fruit to directly infuse the bean with greater complexity of flavor. It produces a sweeter cup with more viscosity and weight in the mouthfeel. Flavor notes include, (not surprisingly), honey, roasted almonds and dark chocolate.
